About the Chef

Growing up on a farm in the Normandie countryside sparked my interest in food from an early age. At 15, culinary school was an obvious choice, and after five years of formalized training and two culinary degrees, I decided to see where my cooking would take me. I've cooked professionally in England, Malta, Saint Barthelemy, even on a Russian Icebreaker in the Arctic Ocean. I've had the humbling opportunity to learn from and work for many amazing chefs, including the famous Jean-Georges Vongerichten. I have now settled down with my wife and partner, Amy, and our vivacious 5 year old daughter, Éva, outside the beautiful city of Portland, Maine. Using only the freshest, seasonal, local ingredients, I am prepared and excited to make your special day a unique dining experience.
